Map

A synoptic map of flavour

Every coffee is a station on the map. Further right means brighter acidity, higher up means a heavier body. The lines join points of equal sweetness, the way isobars join points of equal pressure.

On each station label: A is acidity, B is body (how heavy the coffee feels in the mouth), S is sweetness, on a 1 to 5 scale. Isolines are drawn every 0.25 points of sweetness. Hover a station to see that coffee’s weather, click to open it.

Meteogram

How a roast unfolds

Bean temperature in two batches of the same weight. The bars below show how fast the beans heat up each minute: the rate falls towards first crack, like pressure before a storm. We drop filter earlier to keep the acidity and take espresso longer for sweetness and body.
