How we roast
A small roastery in Nizhny Novgorod. Two roast days a week, eight coffees, a roast date on every bag.
The week
We take orders until 20:00 the day before a roast. We roast on Tuesday and Friday and ship the next day.
Two profiles
Filter and espresso follow different curves. Filter comes out of the drum earlier and lighter to keep its acidity; espresso goes longer, towards sweetness and a heavy body.

Resting the beans
After roasting the beans release carbon dioxide, and for the first days the taste is still settling. The chart shows when each profile is at its best.

We buy each country’s fresh crop, so the line-up changes through the year. Filled months are harvest months in the country of origin.
