Kalita Wave

A flat bed, even and sweet extraction

The Kalita has a flat bottom and three small holes, so the water stays in the coffee longer and drains evenly. It forgives more than a V60: the cup comes out sweeter and heavier, and a wobbly pour matters less.

Step by step

  1. Rinse the filter and warm the server.
  2. Bloom with 2.5 times the dose in water for 40 seconds.
  3. Pour small amounts in the centre, avoiding the walls.
  4. The drawdown should finish by 3:30.

What ends up in the cup

A sweet, rounded cup. Thaw, Fog and Drizzle are good choices.

If something goes wrong

The filter sticks to the walls and water runs down the edge
Keep the stream off the filter pleats and pour into the centre.
The cup is flat, with no acidity
Shorten the brew: grind slightly coarser or cut the last pour.
